WebAIDA64 is a Win program. If it works, it's probably because Intel provides proper Win drivers for a particular NUC. OP's problem stems from using lm-sensors, which isn't supported, i.e. Intel doesn't provide open source module for reading fan speed. Here's a list of many monitoring tools that Intel recommends.
